About Chef Paul
Great food has been Paul’s life.  Growing up in a strong culinary atmosphere with a mother who is a national authority on Canadian cuisine and three brothers who are also deeply involved in the food industry, he has been fortunate to be surrounded by some extremely positive influences.  

Paul started working as a dishwasher at the age of 12.  Quickly, he climbed the culinary ladder, and over the years has worked in many exciting and cutting edge restaurants, hotels and clubs. He is a charter member of Cuisine Canada, as well as Slowfood, Vancouver Island. Paul graduated with Honours from the Stratford Chefs School in 1997 and since then, he hasn’t looked back.

His food philosophy is simple… keep it real, local and fresh.  "A chef cannot make a wonderful meal with sub-standard ingredients." He believes in instilling an awareness of where food comes from, how it’s produced and how it nourishes the body. "A chef is only as good as his ingredients and the loyalty of his staff."
