Chef Paul's food philosophy… Keep it real, local and fresh.

Chef Paul, Chef Jamie and the Silva Bay Resort have a strong commitment to using many fresh, local, or organic ingredients.  

Chef Paul has met with local farmers on Gabriola to grow vegetables for the Resort, and travels Vancouver Island in search of local produce and fruit.

Every effort is made to stay, as Chef Jamie says, as organic, natural and humane as possible.
